When that red curd meets a light stock, the result shifts from red to pink—vendors may deepen it with chilies/sriracha or, in some places, food color. At Bangkok Cafe, we keep it natural and flavor-forward: we use enough fermented red tofu for taste and a soft pink-orange hue, not the super-bright neon you might see elsewhere.
